Easy to Make Recipes for Navratri 2014
During this auspicious time of Navratri, people observe fast and eat only once in a day. It is believed that the meal during the Navratri fast must be vegetarian, in addition to that onion and garlic are not included in the meal prepared during this time. Despite certain dietetic restrictions, we can also make dishes that needn’t requires special ingredients and vegetables.
Although, there are lots of dishes can be made, but we are taking up some of the easy to make Navratri recipes.
Dosa (Made of Kuttu)
If you are fasting during these nine auspicious days, a very delicious dosda made out of Kuttu can be a very good option. Such a Dosa does not make use of any of the impermissible ingredients and thus, is a perfect Navratri vrat recipe for those who have kept fast. It can be prepared in a very short time. So you can try making this dosa if you want to prepare something that is very quick and easy to cook.
Key Ingredients: Potatoes, Ginger, Green Chillies, Salt, Red Chilli, flour (kuttu), boiled Arbi
Procedure:
Dosa Filling:
Crush the boiled potatoes and mix them in rest of the ingredients. Fry till it becomes light brown. Keep it aside until you prepare dosa.
Dosa: In a bowl, mix boiled arbi, salt and water. Add the red chilli powder, ginger and green chillie. Keep adding water and stirring it well. On a flat pan, pour a bit of ghee and then the batter. Cook for a few minutes and spread ghee to make it crispy. Then cook the other side. Now add filling on top and then fold the dosa over. Super delicious dosa made out of kuttu is ready to be served.
Vrat Kheer (To be served in kulhad)
This is quick and easy recipe and does not demand much culinary expertise. Decorate with rose petals and pistachios. Also, add dry fruits of your choice, almonds, cashews and raisins along with saffron and cardamom and serve in kulhads or earthen bowls.
Key Ingredients: Milk, Sugar, Cardamom powder, Samai Rice, Dry Fruits
Procedure: Soak samai rice in water for atleast an hour before cooking. Boil milk for atleast 20 minutes on flame. Once it is boiled, add soaked rice and then stir it very well. Keep stirring it untill it becomes thick. Add sugar and mix it well. Add dry fruits of your choice, cardamom powder and then turn off the flame. Garnish with dry fruits and serve it nicely in kulhads.
Halwa (Potato Halwa)
Mostly during Navratris, People eat potatoes in fried or boiled form. You can make potato Halwa which is super delicious and easy to make. A totally satvik dish that is very much suitable for those who have kept fasts during this time.
Key Ingredients: Boiled potatoes, Sugar, Pure ghee, Cardamom powder, Almonds, Pistachios
Procedure: Mash the boiled potatoes, pour ghee in a pan and allow it to heat. Then mash the potatoes and add them . Stir the halwa continuously or else it will start sticking at the bottom. After approximately 20 minutes, it will turn light golden and starts giving a nice aroma. Add sugar and water and keep stirring till it starts leaving the sides of the pan .Now add dry fruits of your choice, cardamom powder and almonds and pistachios. Mix it well and serve.
Sabudana Puri
A delicious but filling recipe with Sabudana is Sabudane ki Puri. To make this recipe, first soak the Sabudana for an hour. Also simmer pea and then mash them. Add delicately chopped green chilly to increase the taste.
Key Ingredients: Sabudana, clarified butter
Procedure: Mix sabudana atta with salt and oil. Knead well with dough and cover it for some time. Heat ghee in a pan and fry green chilli, salt, red chilli powder and sabudana. Remove it from the flame and let it cool. Then make small balls and roll them into small chapatti. Stuff these with the already prepared mixture and again roll them into shape of a puri. Heat up ghee in a pan to fry the puri in ghee till it changes to light brown. Tasty sabudana puri is ready to be served.
